Christmas Apple and Onion Chutney

A perfect quick and easy hamper filler.





It's late November and I've suddenly realised it's only 4 weeks to go until Christmas! And so I've really got to get cracking sorted these Christmas gifts. I've decided to make some hampers full of homemade goodies. One of the fillers for these will be this an Apple and Onion Chutney. It's not too difficult, although the recipe I used only made 3 jars (handy, as that's all I needed), but you may need to add more if you're wanting a larger batch.

You'll need:

. 4 red onions, peeled and chopped
. 8 apples, peeled, cored and chopped
. Approx 340g dark muscavo sugar
. 110g raisins
. 1 tspn ground coriander.
. 1 tspn all spice
. 1 tspn paprika
. 1 tspn salt
. 450 ml malt vinegar

Essentially you add all of the ingredients to a large pan or wok and simmer for around 2 hours, or until you can draw a spoon through the mixture and it leaves a channel which doesn't fill with liquid.




 For storage I bought some clear glass jars which need to be sterilised before you add the mixture to ensure it can be stored for several months. To do this, thoroughly clean the jars and whilst damp place in the microwave and heat for just under a minute. Make sure you don't add a cool mixture to a warm glass or warm mixture to a cool glass as this may cause the jar to shatter. Screw the lid on tight when the mixture is still hot and as it cools this will help it to seal.

When it's all cool add some fancy Christmassy decorations and pop it into the cupboard. All ready for Christmas!
