Chicken and Leek Sweet Potato Pie

A delicious winter warmer for these chilly days!








I knocked this up the other day combining a few different recipes I found. Serves 3-4, depending on how greedy you are! You will need:

. 4 sweet potatoes
. Chicken fillets
. 3 leeks
. 1 large white onion
. Double cream or crème freshe
. Button mushrooms
.130 ml white wine
. Chicken stock
. Zest of orange
. Milk and butter for the sweet potato mash
. Salt and pepper
. Fresh parsley

Begin by pre-heating the oven to 180 degrees.

Peel and chop the sweet potatoes and boil in slightly salted water until soft.

Whilst the potatoes are boiling peel and chop the onion and softly fry in oil. Add the chicken, leeks and mushrooms and fry until chicken is slightly browned and vegetables have softened. Season to taste. Add the white wine and chicken stock and simmer until cooked through.





Drain the chicken and veg and add to an oven proof dish. Keep the sauce in the pan over a low heat, and add the chopped parsley and cream/crème freshe and simmer; stirring constantly until the sauce thickens. 

Drain and mash the sweet potatoes, adding milk and butter and the orange zest. Mash until soft with no lumps.

Pour the cream sauce over the chicken and veg in the dish, and top with sweet potato. Pop it into the oven and cook until the potato has gone slightly crispy.

Serve with seasonal vegetables.
